One of the funnest things we did for dinner while the kids were young was “make your own pizza night”! It’s so easy and everyone gets exactly what they want to eat AND they get involved and you get to interact. I used to use the Pillsbury pizza crust dough, and if you want to go with the whole rolling it out and letting your kids make their own crust, it’s easy, but nowadays with just my husband and I, I use whole wheat flatbread! The bread is ready to go and we make “healthy” pizzas by using different sauces and toppings.
First, preheat oven to 375 degrees and layout your favorite pizza ingredients so that you and your kids can make their own. If you are using pizza dough from the can, follow the directions on the can, if not, just lay your flatbread, or Boboli crust or pita bread on a cookie sheet. Then spread on your favorite sauces and toppings and cook for around 15-20 minutes. In the past, I have purchased grated cheese, canadian bacon and pepperoni and then pre-cooked italian sausage and ground beef. I’ve also opened a can of diced olives, chopped up some onions, whatever you and your kids like! For the sauce, I’ve used a cheap private label (Best Choice Meat Flavor Pasta Sauce in the large can) as our base. You can also do an alfredo and add spinach and oregano. Possibilities are endless and it makes the meals entertaining. I even hosted 18 ladies for a “make your own pizza” luncheon last summer and it was a hit!
BBQ BACON CHICKEN PIZZAS:
Using your favorite BBQ sauce as your “marinara” spread over the entire flatbread, or crust. Top with Tyson fully cooked cubed chicken breast (I cut them into slightly smaller pieces than in the package), I then “tear up” fully cooked bacon and add red onions, and part-skim Mozzarella.
Using your favorite salsa as your “marinara” spread the salsa all over the entire flatbread or crust. Top with pre-cooked, drained beef or Tyson fully cooked cubed chicken breast. Then add diced olives, onions and tomatoes and top with a very small amount of shredded cheese. When pizza is done and you pull it out of the oven, add a small handful of shredded lettuce to the top and more salsa if you’d like. It’s wonderful!!
