This week I’m sharing a recipe that I’ve modified and made from one I saw in a magazine. It’s sweet potatoes, tomatoes and ground pork in a really GREAT mole sauce. Originally I put it on low-calorie corn tortillas with slaw mix, and it was really good, however, the meat mixture is really, really delicious entirely on it’s own (I even had my husband try it out of the pan after we had dinner and he said it was great too) so tonight, I’m not going to “cover it up” with slaw mix. Instead, I’m going to stuff the sweet potato/meat mixture into pita pockets.
Ingredients: 1-lb. ground pork; 1 sweet potato scrubbed and cut into 1/4-inch cubes; 1 cup diced plum or vine-ripe tomatoes; 1 tbsp peanut butter; whole pita bread; 1/2 cup water and 2 tsp unsweetened cocoa powder
Directions: heat a large saute skillet on medium heat, slowly add ground pork, stirring and breaking up with wooden spoon until beginning to brown (about 2 minutes). Add diced sweet potato and saute, stirring frequently for another 2 minutes. Add tomatoes, peanut butter and cocoa and 1/2 cup water. Stir until peanut butter melts and cover and reduce heat to simmer for 10 minutes. Cut pita bread down middle and open pockets, fill with meat mixture! Serve two pockets to each person and enjoy!!
