This week I’m making it super easy — and you’ve probably made this yourself, but sometimes we just need a quick reminder of good old staple recipes. Since it’s 81 degrees today, I have got to get to the grill — (but don’t worry, this one can bake in the oven if you don’t have a grill). All you need are skinless, boneless breast tenders and a bottle of Wishbone Fat Free Italian Dressing and you have a great grilled chicken recipe. I marinate my tenders in the dressing (just enough to cover the raw chicken) for the entire afternoon (if you’re running late, don’t worry about the marination time). About a half hour before I’m ready to grill, I pull it out of the fridge, to let meat sit. Then turn on the grill to medium and grill until chicken is done (160 degrees internally or if you have to bake, bake at 350 degrees until you reach 160 degrees internally). Tonight I’m adding an Arugula, Goat Cheese with Honey, Toasted Pine Nut and Balsamic salad in addition to Alexia Chipotle Sweet Potato Fries! (the fries are awesome! Very low calorie and baked!) You can put whatever easy sides you like! Slice up a cucumber and lightly add sea salt, or mix together some tomatoes and onions in a bowl.
